Risotto with radicchio and spicy sauce

Ingredients

  • Pork Luganega with Fiorani chilli 300 g
  • Carnaroli rice 350 g
  • Radicchio 1 strain
  • Half white onions
  • Butter 40 g
  • Still white wine 100 ml
  • 1 drop balsamic vinegar
  • Vegetable broth 1 l
  • Grated cheese 50 g

Sauté

In a well-heated pan, sauté the spicy luganega in chunks. Set aside and, in the same pan, sauté the radicchio cut into strips over high heat, adding the balsamic vinegar and a little broth. Keep a little aside, and blend the rest.

Risotto

In a pan, sauté with finely chopped onion and a small part of the butter taken from the total. Toast the rice and deglaze with the wine. Bring it to cooking alternating the hot broth and the radicchio puree.

Manteca

A cottura ultimata aggiungete al risotto anche la luganega tenuta da parte, e mantecate infine con burro e formaggio grattugiato. Servete il risotto con poco radicchio saltato.
