Ravioli filled with pork shank

Ingredients

  • Fiorani Cooked Pork shank 450 g
  • All-purpose flour 260 g
  • 2 Medium eggs + 1 yolk
  • Grated cheese 80 g
  • EVO oil 2 spoons
  • Rosemary a few sprigs
  • 1 Boiled potato
  • Butter 20 g
  • White pepper to taste

Preparation

Heat

Heat the cooked pork shank at a low temperature in the microwave or oven. Shred around 200 g of meat, chop and mix in half a boiled potato and grated cheese.

Fill

Knead the egg into the flour and use a pasta machine to obtain flat strips of pasta. Distribute knobs of filling on the pasta, cover with another strip of pasta and cut the ravioli with a toothed wheel.

Cook

Blend the remaining pork shank and potato with the cooking sauce, oil, rosemary to make a sauce. Keep warm in a large pan. Boil the ravioli in plenty of boiling salted water, then drain directly into the sauce. Stir in the butter and pepper and serve garnished with rosemary.
