Glazed pork coppa roulade with apple sauce

Ingredients

  • Pork coppa roulade 700 g
  • Honey 100 g
  • Sherry 50 ml
  • White wine 400 ml
  • Cane sugar 70 g
  • Apples
  • White sugar 30 g
  • Cinnamon½ stick
  • 1 Untreated orange

Preparation

Wash

Wash the orange, grate the peel and squeeze out the juice.

Mix

Heat the honey with the cane sugar in a small pan over a low heat, when the sugar has dissolved remove from the heat and mix in the orange juice.

Brush

Meanwhile, pre-heat the oven to 180 °C.
Peel an apple, remove the core and cut into segments.
Brush the honey and sugar mixture over the pork coppa roulade and cook for 25 minutes, with the apple slices, and brush over more of the syrup while cooking.

Peel

Meanwhile, peel the remaining apples and remove the core, cut into pieces and cook in a small pan with the sugar, wine, sherry, orange peel and cinnamon, cook for 10-15 minutes or until completely soft, then blend with an immersion blender and set aside.

Remove from the oven

Remove the coppa roulade from the oven, then slice and serve with the apple sauce.
