Broccoli and sausage risotto

Ingredients

Doses for 2 people

  • Fiorani sausage 200 g
  • Garlic 1 clove 
  • Oil
  • White wine 1 glass
  • Broccoli head
  • Vegetable broth 500 ml
  • Parmigiano-Reggiano cheese 30 g
  • Butter 1 knob

Cut

Cut the sausage into pieces.

Clean

Clean the broccoli and keep only the florets.

Cook

After a few minutes add the broccoli and cook for a while longer, then add the rice and toast until shiny, then pour in the white wine and leave the alcohol to evaporate.

Add

Now add a ladle of hot broth at a time until the rice is cooked, stirring continuously.
Once cooked, remove from the heat and stir in the Parmigiano-Reggiano and the knob of butter and serve warm.
