Basket of parmesan and tartare with fresh mushrooms

Ingredients

  • Fiorani veal tartare 210 g
  • Grated cheese about 260 g
  • Fresh champignon mushrooms 200 g
  • Extra virgin olive oil 2 tbsp
  • Parsley 1 bunch
  • Salt and pepper to taste

How to make it

Disc

Heat a large non-stick frying pan well. Divide the grated cheese into 4 portions and roll each out into a circle in the pan. Wait for it to melt and, once the edges become amber, take each disc and place them on overturned cups or glasses. Let dry.

Mushrooms

Meanwhile, clean the mushrooms and slice them. In the same pan as the cheese, heat the oil and sauté the mushrooms over a very lively flame for a few minutes. Season with salt and parsley.

Make up

Make up the cheese baskets by placing in each one a portion of tartare and a little sautéed and not too hot mushrooms.
