Ingredients

  • Veal Tartare Fiorani
  • Avocado Hass 2 mature
  • Evo oil 30 g
  • Lemons 1
  • Black pepper to taste
  • Salt flakes to garnish
  • Salt to taste
  • White onion half

Guacamole

Clean the avocados and cut the pulp into small, regular cubes. Season with oil, pepper, salt and onion finely chopped and rinsed under water. Finally, lemon juice.

The base

Use an aluminum cylinder with a diameter of 10 cm to form the base of avocado: push it on the plate. Press the tartar on the avocado, then gently remove the cylinder. Proceed with the other portion.

Serve

Serve with a little oil, pepper, salt flakes and a little grated lemon zest.
