Tongue with green sauce

Ingredients

Doses for 4 people

For the tongue

  • Beef tongue 500 g
  • Onion 
  • Carrot
  • Celery 1 stick
  • Peppercorns

For the green sauce

  • Parsley 1 bunch
  • Garlic 2 cloves
  • Extra-virgin olive oil
  • Anchoviesin oil

Preparation

Fill

Fill a thick-bottomed pan with water and boil with a peeled carrot, onion and celery stick; when the water is boiling, add the tongue and cook for 1 hour, covering the pan with a lid.

Blend

Meanwhile, prepare the green sauce, put the parsley, garlic cloves and anchovies in a tall narrow beaker and blend, adding as much oil as is needed to make a thick sauce, then set aside.

Remove

After cooking the meat, use a knife to remove the skin.

Cut

Cut the tongue into thin slices and arrange on a plate.
Serve accompanied by the green sauce.
